I don't think social justice is or can be taught through theories exactly as you indicate above. Much of social justice teaching is practical - as you say, students learn how to stick to principles and values they believe in. You can do this through introducing service learning into the curriculum. The curriculum is not just theoretical lectures to be thrown at students, it should consist of child-centered strategies to engage students in social justice activities. Delving into 'theory' really only extends to illustrating to students (again through child-centered activities) how people historically took action to stand up for their rights, for example, in the Indian independence movement and the African-American freedom struggle.
